Elotes, the Mexican street corn treat, has always been one of my favorite ways to eat corn, But it wasn't always easy to find in restaurants stateside and on the cob it can be messy. Now chefs are turning it into a plated dish and it's available far and wide so I jumped on the chance to do this story.

Elote, the Mexican street corn on the cob slathered with mayo, crumbled cotija cheese, chile and lime, is an addictive combination of flavors that leaves you always wanting more. Once you've had it, you never forget it. And yet it wasn't always so easy to come by north of the border.
